Spiced and seared tuna with green potato salad and shitake mushroom salsa

The combination of spices complements the mild flavoured tuna & makes for a good combination with the zestiness of the potato salad.

The natural smoky flavour of the shitake mushrooms serves to enhance the distinct characteristics of the spices.

Ingredients

Spice mix:

  • 2 Tablespoons cumin powder
  • 2 Tablespoons coriander powder
  • 1 Teaspoon sesame seeds (toasted)
  • 1 Teaspoon black onion seeds
  • 2 Tablespoons smoked paprika
  • 1 Teaspoon coarse black pepper
  • Salt for seasoning

Method

Combine all ingredients in a mixing bowl & season with salt.

Tuna:

  • 300g Yellow fin tuna loin
  • Juice of 1 fresh lemon
  • Spice mix

Method

Squeeze juice of lemon over tuna, dust with spice mix & sear.

Green potato salad:

  • 2 Medium potatoes cubed
  • 2 Cups of water
  • 2 Teaspoons of salt

Method

Add water, salt & potatoes to a saucepan & bring to the boil. Cook potatoes until tender & drain using colander. Set aside to cool.

Green pesto:

  • Juice of 1 fresh lemon
  • 10 Stems of fresh rocket
  • 100ml Sunflower oil
  • 1 Tablespoon drained capers drained
  • Salt & freshly ground pepper to taste

Method

Place all ingredients in a blender & blend until smooth. Stir in potatoes & season to taste.

Shitake salsa:

  • 4 Shitake mushrooms sliced
  • 1 Clove garlic crushed
  • 1 Teaspoon ginger finely chopped
  • 1 Teaspoon sesame oil
  • ½ Medium onion finely chopped
  • 100ml Canola oil
  • 2 Tablespoons teriyaki sauce

Method

In a saucepan warm up sesame oil & sauté onions, ginger & garlic. Sauté until onions become translucent then add in mushrooms. Cook mushrooms until softened & remove from heat. Add canola oil. Season using the teriyaki sauce.

Assembly

Place 1 tablespoon of potato salad in the centre of a dinner plate. Cut tuna into 1cm slices & arrange on potato salad. Dress with shitake salsa & garnish with micro greens.
