Arrange the cos & butter lettuce in a pasta bowl. Place the tomato fillets on the lettuce, followed by the smoked mozzarella cheese & avocado puree. Combine one tablespoon of the basil pesto with the olive oil & drizzle over the arranged salad. Finally, garnish the salad using the toasted baguette slice brushed with the remaining tablespoon of basil pesto.

- 2 Tablespoon basil pesto
- 2 Tablespoon extra virgin olive oil
- 2 Tablespoons avocado puree
- 150g Smoked mozzarella cheese sliced
- 1 Tomato quartered and filleted
- 1 Slice of baguette toasted
